Baked Salmon with Dijon Mustard and Chives

Once I saw a photograph of a salmon fillet with mustard. Intrigued, I concocted a mixture with ingredients I had at hand and loved it. It has been my favorite way of baking salmon ever since.

Ingredients

  1. 2salmon fillets
  2. 5chives
  3. 1 Tbspwhole-grain Dijon mustard
  4. 1 Tbspolive oil
  5. 1 pinchsalt
  6. Ground black pepper

Cooking Instructions

    After getting the salmon fillets, keep them in the refrigerator in a bowl with a generous pinch of salt, cold water to cover and a few ice cubes until ready to bake.

    Wash the chives and finely slice them.

    In a small bowl combine chives, mustard, oil, a pinch of salt and ground pepper to taste.

    Remove salmon from salted water, dry with paper towels and place on a baking sheet lined with aluminum foil.

    Coat fillets with the mustard mixture and bake in a preheated oven or toaster oven at 450 degrees F for 17 minutes if you like them well done.

    Remove from oven or toaster oven and let them rest for 2 minutes.

    Carefully separate the skin (attached to the foil) from the fillet with a spatula. Serve and enjoy.
