Here's my celebration of the beautiful British strawberry, a highlight of every summer once they come into season.
A thin light and fluffy layer of vanilla sponge topped with sweet strawberry yogurt and an abundance of sliced fresh strawberries and cream makes for a gorgeous afternoon treat with a cup of tea. I recommend a nice Earl Grey with this! This is an ideal treat if you are only looking to serve a smaller group as it makes 4-5 portions.

Note: Don't like or have yogurt? Why not substitute with a layer of strawberry jam instead? Just as delicious! :)

Ingredients

  1. For the batter:
  2. 100 gplain flour,
  3. 50 gcaster sugar,
  4. 1medium egg,
  5. 30 mlvegetable oil,
  6. 30 mlmilk or milk alternative such as almond milk,
  7. 1 tspvanilla extract,
  8. 1level tsp baking powder,
  9. 1 pinchsalt
  10. For the toppings:
  11. 3 tbspstrawberry yogurt (I used one with fruit bits in),
  12. 10-12fresh strawberries, sliced thinly, tops discarded,
  13. Icing sugar to dust,
  14. Spray whippy cream (from a can), or can use fresh piped,
  15. To garnish:
  16. Some leaves of fresh mint,
  17. Other:
  18. tinButter or spray oil for greasing

Cooking Instructions

    Begin by preheating your oven to 180 (fan). Add all of the dry ingredients for the batter into a large bowl and combine.

    Next make a well in the centre and add in all the wet ingredients. Mix together really well until a very smooth and glossy batter is created. Grease your cake tin well with either butter or spray oil. Pour in the batter and smooth up to the edges neatly.

    Bake at the centre of the oven for 15-20 minutes until risen, golden and a toothpick comes out clean from the middle. Once cool enough to handle, turn it out upon a wire rack to cool completely before decorating. You must not decorate the cake whilst still warm, otherwise the decorations will slide off and melt!

    To decorate, smooth strawberry yogurt neatly over the top in a layer around 2-3mm thick, don't take it too near the edges as you don't want it dripping down the sides too much.

    Fan out the sliced strawberries on top in a circular layered pattern then add some cream in 'roses' around the edge, dust over some icing sugar before serving. Finish with a few small fresh mint leaves to add a pop of colour and extra freshness and enjoy! :)

    Note: Leave in the fridge before serving, recommend not adding the cream and icing sugar/mint leaves until right before serving to your guests for a better appearance.
