Crispy Bacon Spaghetti Carbonara

A beautifully silky carbonara is pure comfort food for many. Most people here in the UK won't have access to the classic guanciale or pecorino cheese needed to make it in their fridge so here I've substituted with parmesan and a streaky smoked bacon instead.

Cooking Instructions

Begin cooking the spaghetti according to packet instructions in salted water. Meanwhile as that cooks heat up a frying pan over a medium heat. Add in the oil and the clove of garlic and the chopped bacon pieces. Fry gently until it begins to go lovely and crispy. This should take around 5-6 minutes.

In a small bowl add the egg yolks and grate in a generous amount of parmesan cheese. Season with black pepper. Stir together.

Once the pasta is cooked remove the clove of garlic from the oil in the frying pan and add the spaghetti into the pan along with a little of the pasta cooking water (around 4 tbsp worth or so), in with the bacon. Toss together and season with a little salt, not too much though as the bacon is salty.

Remove the pan from the heat and leave to cool for around three minutes, this is so you don't scramble the eggs, then pour in the egg/cheese mixture. Toss through the strands to coat in a glossy golden sauce. Grate over more parmesan before serving and season with a touch more black pepper if desired. Enjoy! :)

We had a potluck at work a couple of days ago and someone brought in a dish that they called carbonara. Now, I'm guilty of being an experimenter myself and making carbonara that's not really carbonara, at least traditionally speaking (see mushroom carbonara, recipe posted previously). But the potluck version was way, way, way out there. In fact, another coworker said it tasted like chicken soup. Which is...weird, but also accurate. The pasta was actually good; it just wasn't carbonara. Anyway, this motivated me to make my own version, sticking much more closely to the dish's roots. The one concession made, out of necessity because it's not a readily available ingredient around here, is the substitution of bacon for the traditional guanciale. Bacon's good, but it's not the same. This is a special recipe developed by carbonara lovers: me wishing for pasta once a week and my husband who used to work at a pasta chain restaurant.Be sure to remove the pan from heat when pouring the sauce into the pasta for a creamy texture. This will allow the eggs to cook very slowly when it hits the hot pasta but it’ll prevent the eggs from scrambling. For bacon, I recommend a block rather than thin slices.
