Lentil and Tomato Soup 🌱

This is my basic lentil soup recipe that I make using my trusty soup maker. I use good tinned tomatoes (San Marzano) or fresh when I can.
I guess a soup maker isn’t for everyone (someone was quite rude about it once 🤣) but I love a gadget that makes easy, healthy food. I make loads of soups, including slowly sautéd, but this easy recipe is still one of my favourite inventions. The recipe is easily adaptable to your blending device if you haven’t got one though.
If you’ve seen any of my lentil recipes you will know I’ve got a thing about skimming the foam (I always think it’s bitter if I don’t). I pre-soak lentils or choose fairly quick-to-cook, bring to the boil and skim the foam before I add them to the remaining ingredients. #soup #lentils #veg

Ingredients

40 minutes
2 people
  1. 1 tinSan Marzano tomatoes (or equivalent fresh)
  2. 1 1/2 cuplentils
  3. 1 small brown onion
  4. 1 small red onion
  5. 2 cupsveg stock
  6. 3 clovesgarlic
  7. 3carrots (optional)
  8. 1small red pepper (optional)
  9. Salt and pepper

Cooking Instructions

40 minutes
  1. 1

    Thoroughly wash the lentils. Add to a pot of water. Bring to the boil and skim the froth that rises to the top. Rinse and add to the soup maker.

    Wash, peel and chop the vegetables and garlic. Add all ingredients to soup maker, switch on smooth setting and turn on. 20 minutes later - enjoy 🥣
