EASY! Creamy Carrot Soup (Carrot Potage)

Ingredients

4 people
  1. 2carrots
  2. 1/2large onion
  3. 400 ml(13.5 us fl oz) water
  4. 1 cubechicken broth
  5. 2bay leaves
  6. 200 ml(6.8 us fl oz) soy milk, or milk
  7. 100 ml(3.4 us fl oz) whipping cream
  8. 10 g (1 Tbsp)salted butter
  9. 1/2 tspsalt
  10. black pepper
  11. olive oil for stir-frying

    Cut carrots into bite-size. Slice onion thinly. Heat oil and add the sliced onion and fry it on medium heat for 2 mins until soft.

    Add butter and carrots, fry it for 3-4 mins.

    Add water, chicken broth, and bay leaves. Cook on medium heat.

  5. 5

    Bring to a boil and then turn down the heat, place a lid on. Cook on low heat for 15-20 mins until soft. Turn off the heat, remove the bay leaves.

    Blend the ingredients with a hand blender (or in a cooking blender) until smooth.

    Add salt, whipping cream, and soy milk and stir until smooth.

  8. 8

    Add black pepper (or salt) to adjust the taste at the end, and warm it on low-medium heat for 3-4 mins. It's done!
