Sweet corn soup is a delicious Indo Chinese style of soup which is prepared using cream style sweet corn. Here I have given the recipe to prepare cream style sweet corn at home. I have added carrots and green beans to the soup but it can be even prepared adding chicken. It is a mild, creamy and delicious soup which can be served as a starter with some snacks, sandwiches or toast bread.

Ingredients

  1. For cream style sweet corn -
  2. 1 cupsweet corn kernels
  3. 2 cupswater
  4. 3/4 teaspoonsalt
  5. 3/4 teaspoonsugar
  6. 1.5 tbspcorn flour
  7. 1/4 cupwater
  8. Soup -
  9. 2 tbspbutter
  10. 1 tspginger paste
  11. 1 tspgarlic paste
  12. 1/2 tspgreen chilli paste
  13. 2 tbspspring onion whites
  14. 1/4 cupcarrots finely chopped
  15. 1/4 cupgreen beans finely chopped
  16. 1/2 tspblack pepper powder
  17. Salt to taste
  18. 2 tspvinegar
  19. 2 tspsugar
  20. 2 cupcream style sweet corn
  21. 3 cuphot water
  22. 2 tbspcorn flour
  23. 3 tbspwater
  24. 2 tbspspring onion greens
  25. 2 tbspfresh cream

Cooking Instructions

    To prepare cream style sweet corn, add sweet corn kernels to the boiling water along with salt and sugar. Cook it for 15 minutes on medium heat. Now mix cornflour with water and make a slurry. Add the slurry and cook until a bit thick on medium heat. Let it cool down. Cream style sweet corn is ready for the soup. You can even store it in the refrigerator for 3 to 4 days. It can be used to prepare other dishes too.

    Heat butter in a pot and add ginger, garlic, green chilli paste to it. Saute it for a minute and add spring onion whites to it and cook it for a minute. Now add carrot and green beans to it and cook further for a minute.

    Now add salt, black pepper, sugar and vinegar to it and give it a good mix. Cream style sweet corn has also got salt so add salt accordingly. Add cream style sweet corn along with hot water.

    Prepare slurry by adding corn flour and water together. When the soup starts boiling, add cornflour slurry to it and give it a good mix. Cook until it becomes little thick. Now add spring onion to the soup.

    Add fresh cream to the soup and cook for a minute. Turn off the heat.

    Serve sweet corn soup garnished with spring onion greens.
