Mix orange juice, lemon juice, tequila, salt, water, and crushed garlic in a bowl.

Place the chicken in the brine, cover, and refrigerate for 4 hours.

Toast guajillo peppers and 1 chile de arbol, then blend with olive oil and black pepper to make a paste.

Remove chicken from brine, pat dry, and rub with the pepper paste.

Roast in a preheated oven at 200°C for 50 minutes, basting the chicken with its juices every 15 minutes.

Steam the white rice until tender.

Boil the pinto beans in salted water until soft.

Grill mango, pineapple, red onion, habanero, serrano, and 1 chile de arbol until charred.

Chop grilled salsa ingredients, mix with chopped cilantro, tequila, lime juice, and salt.

Warm the tortillas.

Serve the roasted chicken with steamed rice, boiled pinto beans, grilled tequila mango and pineapple salsa, tortillas, and extra salt to taste.
Tips
Baste the chicken during roasting to keep it juicy and flavorful.
