This rose harissa chicken is so simple to make and it packs in plenty of veggies for a healthy meal ready in under 30 minutes. I like to serve alongside either coconut rice or some cous cous/ bulgur wheat with a drizzle of tahini over the top. You can find rose harissa paste in many larger supermarkets and online. It's harissa paste made with rose petals.

Ingredients

25 mins
2-3 people
  1. 2chicken breasts, diced,
  2. 1.5heaped tbsp rose harissa paste,
  3. 60 gfeta, crumbled,
  4. 250 gbaby spinach leaves,
  5. 1yellow bell pepper, sliced,
  6. 2vine tomatoes, diced,
  7. 1red onion, sliced,
  8. 2 tbspthick Greek yogurt,
  9. Salt and pepper to season,
  10. 1 tbspvegetable oil
  11. To serve:
  12. Tahini sauce

Cooking Instructions

    Add the oil to a large pan and once hot over a medium heat, add in the onions and bell pepper. Fry for a few minutes until the onions begin to soften a bit. Scrape the onions and peppers over to one side then add in the chicken pieces to the empty side. Fry the chicken for about four minutes then add the harissa paste.

    Coat the chicken in the paste until deep red then season well with salt and pepper. Toss everything together and fry for around three minutes. Add the spinach and tomatoes and leave on top to steam and begin to wilt down. After around four minutes, stir the spinach through until well incorporated. Bring to a simmer by turning the heat down on the hob.

    Remove the pan from the heat. Cool for two minutes then stir the yogurt through. Crumble feta over the top and serve up. Drizzle with tahini if desired and enjoy! :)
