For #pancakeday #ShroveTuesday, I decided to give pancakes a Lebanese twist by adding Zaatar, the king of every breakfast back home!

This was SUPER DELICIOUS!!! I recommend that you all try it and I guarantee that you’ll fall in love!

😍 I liked the taste of wholemeal flour in these pancakes! I imagine it goes better with the taste of zaatar.

Ingredients

15 minutes
2 servings
  1. 1 cupwholemeal plain flour
  2. 1medium egg
  3. 1 teaspoongranulated sugar
  4. 1 teaspoonvanilla extract
  5. 1 teaspoonbaking powder
  6. Around3/4 cup semi skimmed milk
  7. 1 teaspoonvegetable oil for the pan
  8. Topping
  9. Zaatar
  10. Cheese, I used parmesan
  11. Labneh, cream cheese or yogurt
  12. Extra virgin olive oil

Cooking Instructions

  1. 1

    Add flour, egg, vanilla, sugar, and baking powder to a bowl and start adding the milk gradually while whisking until you get the right texture. Not too runny, not too thick.

    Add a teaspoon of oil to a good non-sticky pan. Pour some of the pancake mixture and keep the heat on medium-low

    When you start to see bubbles on top, sprinkle some zaatar and cheese. Flip the pancake and cook the side with the toppings on for 20-30 seconds. (Only one side will have toppings)

    Repeat. Serve with Labneh, cream cheese or plain yogurt on top with a tiny sprinkle of zaatar and a good drizzle of extra virgin olive oil

That’s interesting Linda coz I use Zatar at times (prompted by a few lunches at Ottolenghi’s some years back) but hadn’t thought of breakfast. John
