Cooking Instructions

Wash and pat dry bhindi.Chop off the tips and tails and cut into 1 inch rounds.Heat 2 tbsp oil in a wok and stir-fry okra/ bhindi in medium heat till light brown.Drain oil and remove bhindi with a slotted spoon.

Grind sesame seeds adding curd in a mixer grinder.Blend to a smooth paste.Add cumin, coriander,red chilli powder and garam masala and whisk to form a smooth paste. Add 2-3 tbsp more oil to the pan.Sprinkle cumin,fennel,fenugreek and ajwain(carom) seeds.When they splutter, add finely chopped onion and fry till golden brown.Add ginger garlic paste and saute till raw smell of masalas subsides.Add blended curd masala, turmeric,Kashmiri Red Chilli Powder, Kasoori Methi and saute for 2 minutes.

Pour 1/4 th cup water for gravy.Cook covered for 2 minutes till gravy is thick.Add stir-fried okra and cook on medium high heat until okra softens.

Cook till gravy coats bhindi and oil leaves sides.Sprinkle chopped coriander and mix.

Garnish with green and red chillies and some chopped cilantro/coriander. Serve it with roti,naan,paratha or as a side dish to steamed rice and dal or with Jeera Rice in lunch or dinner.

Note to self: I absolutely love okra, it’s one of my favorite vegetables right after beets. There’s just something about cooking okra that reminds me of childhood. I remember my mom using leftover okra and making grilled stuffed sandwiches with them. Now this recipe is one of my mom’s and I’ve been sworn into secrecy about the spices used. (My family owns a Pakistani restaurant, Lazeez Asian Cuisine, and disclosing the spices aren’t an option as of yet). But I’ve found a way around it with the permission of my momma so you guys can enjoy the authentic taste of Pakistani cuisine! I’m in the process of trying to brand and sell individual spice mixes for these Pakistani dishes (in collaboration with Lazeez Asian Cuisine) and later on to other recipes as well.
