Ingredients

1 hr 15 mins (includes boiling potatoes & spinach)
  1. 4medium potatoes, boiled
  2. 1small onion, finely chopped
  3. 1 bunchcilantro, finely chopped
  4. 1 bunchspinach, washed and boiled
  5. 2green chilies, chopped (optional)
  6. 2 teaspoonsginger, minced
  7. 1 teaspoonturmeric powder
  8. 1 teaspoonKashmiri red chili powder (optional)
  9. 1/2 cupsemolina
  10. 1 teaspoonsalt (adjust to taste)
  11. 4 tablespoonscooking oil, divided

Cooking Instructions

    First, boil the potatoes and set aside.

    Next, boil the spinach and keep aside. Chop the onion, cilantro, and green chilies, if using. Mince the ginger. Gather your spices and keep the semolina handy.

    Take a larger serving container and mash the potatoes well.

    Add the boiled spinach, chopped onions, chopped green chilies (optional), turmeric powder, Kashmiri red chili powder (optional), ginger and salt. Now add the chopped cilantro and the semolina. Use your hands to mix everything together well and form a “ dough”.

    Now grease your palms with a bit of oil and form the tikkis (patties) into round shapes.

    With the remaining oil, shallow fry the tikkis on both sides till lightly browned.

    Serve with green chutney, tamarind chutney, ketchup or any condiment of choice.
