Cooking Instructions

Add flour, sugar, baking powder and salt in a bowl. Add butter and mix with fingertips go form fine breadcrumbs

Add milk 1/2 a cup and mix, if dough is still dry add the second half. You should get a pretty sticky mixture. Add the lemon zest and lemon juice, mix well

Use a spoon to scoop out chunks of the sticky batter and place on a greased baking tray
- 4
Bake in an oven at 180°c for 15-20 minutes or until they turn golden brown

This compares to blueberries 15 grams of sugar per cup, I also double the recipe but used only 2 eggs for 24 muffins . Each egg contains 5g of fat. you may want to use 3 eggs for 12 muffins , ?
