Cape Cod Berry Muffins

My wife loves blueberry muffins and I love cranberry muffins. We decided to combine both muffins and came up with this recipe. So yummy and delicious! It is great for Christmas breakfast!

My wife loves blueberry muffins and I love cranberry muffins. We decided to combine both muffins and came up with this recipe. So yummy and delicious! It is great for Christmas breakfast!

Preheat oven to 400F degrees.

Clean the berries together, then let together while you prepare the rest of the ingredients.

Stir together the dry ingredients, flour, baking powder and salt, in a large bowl.

In a medium bowl, mix together the zest and the sugar. It’s best if you use your fingers. Mix together until it gets a wet sandy texture.

Add the vegetable oil, milk, eggs, orange juice and vanilla extract to the sugar mixture, until blended.

Add the sugar mixture to the dry ingredients, then stir until well combined.

Fold in the berries into the mixture, then pour into the paper lined muffin pans. Sprinkle each muffin with turninado sugar.

Bake in the preheated oven for 25-35 minutes, until golden brown on top and a toothpick comes out clean. Let cool, then enjoy!
