Ingredients

25-30 minutes
12-16 muffins
  • 2 cupsall-purpose flour
  • 2 teaspoonsbaking powder
  • 1/2 teaspoonsalt
  • 1 cupgranulated sugar
  • zest of 1 orange or 1 lemon
  • 1/2 cupvegetable oil
  • 1/2 cupmilk
  • 2large eggs
  • 1/4 cuporange juice
  • 2 teaspoonsvanilla extract
  • 1 1/2 cupsfresh cranberries and blueberries, combined together
  • Dashturbinado sugar

Steps

25-30 minutes

    Preheat oven to 400F degrees.

    Clean the berries together, then let together while you prepare the rest of the ingredients.

    Stir together the dry ingredients, flour, baking powder and salt, in a large bowl.

    In a medium bowl, mix together the zest and the sugar. It’s best if you use your fingers. Mix together until it gets a wet sandy texture.

    Add the vegetable oil, milk, eggs, orange juice and vanilla extract to the sugar mixture, until blended.

    Add the sugar mixture to the dry ingredients, then stir until well combined.

    Fold in the berries into the mixture, then pour into the paper lined muffin pans. Sprinkle each muffin with turninado sugar.

    Bake in the preheated oven for 25-35 minutes, until golden brown on top and a toothpick comes out clean. Let cool, then enjoy!

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
