My grandmother taught me how to cook this, but I added some of my own ingredients. shhh!!! Don't tell her 😂
Cooking Instructions

Steam the samp together with salt
- 2
Add the beans
- 3
After an additional hour add cooking oil and butter
- 4
Add chicken stock and cream of mushroom to the samp
- 5
Mix the fresh milk and powder milk then pour into the samp
- 6
For the remaining 3 minutes add dry parsley

Traditionally, black eye beans are used.Cooking both beans and plantains together created a very comforting and satisfying flavour, making it a hearty meal.I also made a Nigerian Zobo drink with sorrel and cinnamon to compliment the bean pottage. Traditionally this drink is made with dried Hibiscus and Sorrel, but I used sorrel alone.Very familiar flavours with a twist!I almost forgot! Don't you guys just love my African flower coasters? They are so pretty and colorful!


Chia seeds, Paw Paw and Peppermint
I'll be honest here, paw paw is not my favorite fruit but I had a huge over ripe one staring at me on the counter! So I added some peppermint and voila, a great concoction.I just love the colour! Enjoy!

#HealthyResolutions - This is my version of a healthy side dish. I came up with this idea when I had to make a dry side dish to be eaten with chapati. As I had only a small amount of beans left over in the fridge, I added boiled chana dal to increase the quantity. The end result was delicious. You can dish out a south Indian version too, by tempering with mustard seeds, urad dal, curry leaves and a pinch of asafoetida and finishing off with a sprinkle of sambar/rasam powder.

Paneer Makhani
Paneer Makhani is definitely a favourite restaurant dish. This is not a low calorie dish but it is very delicious. I don't buy a lot of paneer because of the calorie factor, but on my recent trip to the indian store I bought a bag of paneer and let me tell ya ... K's facial expression was more than enough to understand that this has now become a family favourite. I loved the smoothness of the gravy ... it was so good! and you've got to try it ... :) and let me know once you have!

It's cheesy and creamy, definitely not spicy and just delicious.My 4 year old is a huge fan of macaroni and cheese, but I wasn't in the mood to eat it for a meal, so when I saw that there was some mince in the fridge that needed to be used, I did some yummy food research and made this dish. It's quick and easy just the way I like it! - perfect for both adults and children.
