Ingredients

  1. 1Avocado pitted & sliced
  2. 2 tbspolive oil
  3. 1onion chopped
  4. 1 tspgarlic chopped
  5. 1 tsproasted coriander powder
  6. 1/2 tsproasted cumin powder
  7. to tastesalt
  8. handfulcoriander mint leaves, roughly chopped
  9. 2 cupVegetable stock
  10. 2 tbspfried onion
  11. as neededlime wedges

Cooking Instructions

  1. 1

    Heat olive oil in a pan & saute the onion & garlic till it turns translucent.

  2. 2

    Then add the sliced avocado and all the dry spices. Give it a stir.

  3. 3

    Add the stock and the coriander-mint leaves.

  4. 4

    Cover & simmer for 4-5 minutes. Switch off the flame & keep aside to cool down. Blend into a puree & heat through.

  5. 5

    Serve with a garnish of fried onion & a dash of lime for a healthy one-pot meal anytime of the day.
