Ingredients

Under an hour
2 people, 4 cups
  • 2 cupsgreek yoghurt, chilled
  • 2yellow lemon cucumbers in 1/4” horizontal slices, chilled
  • 1peeled shallot, chilled
  • 1peeled garlic clove, chilled
  • 1Moroccan salted pickled lemon wedge, chilled
  • 1/4 Tspcumin seeds
  • 1 Tspfresh slivered fresh basil leaf
  • 1 pinchfreshly crushed green peppercorns
  • Equipment: food processor
  • Cost: lemon cucumbers, farm free or 30 cents a piece at the farmers market, other ingredients $1

Under an hour
  1. 1

    Sprinkle 1/4” thick horizontal lemon cucumber slices with seasalt to increase cucumber flavor by drawing out bitterness, about 15 minutes.

    When salt has drawn out the liquid, rinse slices, put in food processor with other ingredients, pulse and taste till you have a crunchy puree.

    Chill soup half an hour. Serve in chilled soup cups. Sprinkle with fresh basil and crushed peppercorns.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
