Ingredients

2 hours + 30 mi
One loaf
  1. 3 cupsMaida
  2. 1 cupmilk powder
  3. 3/4 teaspoon Salt
  4. 1 teaspoonSugar
  5. 1 teaspoonyeast
  6. As neededWarm water
  7. as requiredButter/ ghee
  8. as requiredCocoa powder
  9. as requiredDark brown colour or black colour
  10. as requiredMilk for brushing the bread

Cooking Instructions

    Take one cup of warm water. Add salt, Sugar and yeast and let it activate for 15 mins.

    Take one bowl or parath. Add maida milk powder and yeast and knead to make sticky dough. Add water if needed.

    Take some butter on clean platform and knead the dough with pull and Stretch method for at least 8 to 10 mins.

    When dough is perfectly smooth grease the dough with ghee or butter and cover it and keep it in warm place. After one hour dough will be double in size.

    Punch the dough well so that there is no air bubbles in it. Divide the dough into 2 parts that is in the ratio of 1:2 parts

    Cover and keep the bigger portion and take the small portion. Add cocoa powder and knead the dough well so that incorporate it well in it. You can add one or 2 tablespoon of water to make the dough smooth because with cocoa powder the dough might get dry.

    Now divide this brown colour dough also in ratio of 1:2. And keep aside larger portion aside

    Add black or dark brown colour in this and mix well. So all three colours of dough are ready. I have taken dark brown colour.

    Now divide black and brown dough into 9 equal parts. Roll the black/ dark brown dough length wise according to the size of loaf container. Roll it into rectangular shape. Take one portion of brown portion and roll it to make a log. Now cover this log with the black dough and seal it. Likewise make for all nine.

    Now take the white dough. Make 9 equal portions of it. Take one portion. Give it rectangular shape.

    Take brown log and put it over white portion and cover and seal it so that it is not seen. Likewise make for all the portion.

    Now take each log and set it in the greased loaf one above another randomly. Cover and keep it for 30 to 40 mins.

    After 30 to 40 mins dough will rise again. Brush it with milk.

    Bake in preheated oven for 18 to 20 mins at 200° temperature. Keep low rack so that it bakes well from bottom too.

    After 18 mins your bread is ready. Take out from the oven. Keep it for 5 min to cool.

    After 5 mins demould from the mould and keep it on rack and cover it with cloth. Allow it to cool completely for 2 to 3. Hours.

    After cooling cut it with sharp knife and serve the bread.
