Cooking Instructions

First thing first make the batter for the wrap. Add the all-purpose flour, corn flour, salt and mix well then gradually add water stirring to make it lump free. Add all the 4 cups of water slowly and mix well. The batter should be of running consistency just like water. Keep it aside for a while and let's prepare the filling.

For the filling add 2 tbsp oil in a wok then add the grated ginger, garlic and green Chilli saute for a while then add the grated carrots. Saute for 2-3 minutes then add the shredded cabbage and cook for 4-5 minutes. The flame should be on high from the begging to the end. Then add the salt and black pepper powder and mix well. Later add the soy sauce and white vinegar mix very well then add the spring onion greens and whites and chopped Coriander leaves.

Dry out all the water but don't make it soggy then off the flame and let it completely cool down. Once it get cool down you can store it in a refrigerator for 2 days. If you want to store your spring rolls then don't add capsicum and onions because they have a lot of water content in it which will ruin the dish but if you want to consume it within 24 hours then you can use. A tip for you. You can add as many things of your choice in the filling like beans, mushrooms etc.

Now let's prepare the wraps. Add 1/2 tsp oil in a pan and clean it with a tissue paper from all the sides. Mix the batter and add a ladle full in the pan and immediately swirl it. Remember the thin the batter the better it will be. Cook it on high flame. It will take 2 minutes to be done. Once the sides start to scrape flip it in a plate. Dust generous amount of all-purpose flour on it to avoid sticking the wrap.

Always keep the downside of the wrap up on the plate because it is quite wet and will stick to rest of the wraps that's why all-purpose flour is dusted to avoid sticking. Let them cool down completely then start filling and making the wraps. If you want to store it then add generous amount of all-purpose flour on every wrap or put cling film in between every wrap and put it in a zip lock bag and store in a freezer. It will be good for 2 months. But store it when it is completely cool down.

Once the filling and wrap both are completely cool down then start assembling the rolls. Take a wrap open it from all sides then add a generous amount of filling on it. Start covering it from the side like a roll slight tightly but gently otherwise it will break up. Then tuck both the ends on top of it and roll till the end. Then apply the prepared edible gum on all sides and stick it. Make sure it's close from all the sides. Like so make all the rolls.

You can even store it in a freezer or deep freezer at this stage for upto 2 months. Simply keep it in a box or ziplock bag and store. When needed take it out allow it to come to room temperature then fry. You can deep fry, shallow fry or even bake it. For making the edible gum add the above-mentioned amount of all-purpose flour and water and make a lump free paste and apply.

Let's start frying it on a high flame turning it all around until get a beautiful brown colour. Deep fry it or shallow fry upto you. You can even bake it for that grease the tray with oil place the rolls on it then apply oil on the rolls and bake it at 180°c for 20-25 minutes or until get desired colour.

Let's prepare a sauce or dip for the rolls. A simple, quick and delicious dip or chutney or sauce. Add all the above-mentioned ingredients for sauce in a pan and mix very well. Make it lump free then keep it on a high flame to cook gor 7-8 minutes. It will get thicken till that time to a sauce consistency transfer it to a bowl. When it's completely cool down then add juice of half a lemon and it's ready to be served.

The rice paper is simply moistened in water and used to wrap up the fillings, so it's easy. If you aren't going to slice the rolls, tuck the ends in as you roll them and they're less likely to fall apart.There are many ways of rehydrating rice paper, but I just wet it quickly in water. If it's over-soaked it becomes really hard to handle.
