Ingredients

  1. 1 kgmutton clean and washed
  2. 4-5medium onions thinly sliced
  3. 2 tbspginger garlic paste
  4. 1 tspturmeric powder
  5. 2 tspcoriander powder
  6. 1 tspred chilli powder
  7. 1 tspsugar
  8. 1 tspgaram medals powder
  9. 4-5green cardamom
  10. 1 inchcinnamon stick
  11. 4-5cloves
  12. 3-4bay leaf
  13. As requiredMustard oil

  17. 1 tbspginger paste
  18. 1 tbspgarlic paste

Cooking Instructions

    In a bowl marinate the mutton with yogurt, ginger-garlic paste, red chili powder, and mustard oil. Cover the bowl with a lid and marinate for 1-2 hours.

    Now in a pressure cooker heat oil. Add bay leaf, green cardamom, cinnamon, and cloves. After a few seconds add thinly sliced onion and sugar. Cook it for 3-4 minutes until golden in color.

    Now add marinated mutton, ginger garlic paste, red chilli powder, coriander powder, and salt. Cook for five minutes.

    Now close with a lid and cook on low flame for 6-8 minutes.

    Now open the lid. Check if the mutton has released water. Now increase the flame and cook the mutton for 10-15 minutes Add garam masala powder. Stir continuously.

    Once all the water evaporates and oil started releasing from the mutton. And the color becomes dark then add one cup of hot water and mix well.

    Pressure cook the mutton for 2-3 whistle or continue to cook until the mutton has fully cooked. And the gravy becomes thick.

    When the entire dish looks dark brown in color and looks like oil oozing thick meaty gravy kind of thing. The mutton kosha is ready.

    Turn the flame off. Pour the mutton into a serving bowl. Serve with paratha or rice.
