Peel, core and thinly slice apples. Stir with 1 tbsp cinnamon and 1 tbsp nutmeg.

Preheat oven to 425 degrees. Melt butter in saucepan. Stir in flour to form a paste. Add water and sugar and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your 9 inch pie pan. Poke holes on the bottom with a fork and brush with egg wash. Fill with apples, mounded slightly and pour liquid on it. Cover with a lattice crust.

Brush top crust with egg wash.

Bake for 15 minutes. Take out and brush with egg wash again. Sprinkle some coarse white sugar on top. Reduce temperature to 350 degrees and continue baking for 35-45 minutes, until apples are soft.

To reheat, bake for 15-20 min at 350 degrees.
