Cooking Instructions

Take mangoes that are not very ripe because, if you select mangoes that are too ripe, they would have less pectin.
But for mango jam, pectin is essential so select ripe mango not overripe.
Also, fibrous mango varieties must be avoided. - 2
So let's wash the mangoes. Cut them and blend them smooth.

Next place a pan, put mango puree, and cook for some time in slow flame.

Next add sugar, a pinch of salt, and mix. Continue cooking at slow flame till you get a sticky consistency. At this time squeeze a lemon. Mix well. Cook for some more time. Now the consistency of the jam is attained. It must be thick and must not slip from the spatula.

Now switch the flame off. Let it cool. Put it in a clean airtight container in the fridge. While using use a clean spoon and clean, dry hands. Your jam won't spoil.

Scale-up quantity if you want to make more.
Put jam on bread/ rusk or even biscuits.
