Creamed Onions and Broccoli

My wife made the best creamed onions and broccoli. It was one of the first dishes she had me make under her watchful eyes. Unfortunately she did not have the recipe written down so I am going by memory, but it turned out pretty good. What’s also great about this recipe is that it makes a lot and the leftovers freeze really well. For variations you can add different vegetables or use different cheeses.

Creamed Onions and Broccoli

Ingredients

30 minutes
6-8 people
  1. 16 ozfrozen broccoli
  2. 14 ozfrozen pearl onions
  3. 1 Tbspolive oil
  4. 3 Tbspbutter
  5. 1scallion minced
  6. 2 clovesgarlic minced
  7. 1/2 cupfrozen poblano pepper (use jalapeño if you want some heat)
  8. 1 tspground black pepper
  9. 1/2 tspsalt
  10. 2 Tbspflour
  11. 2 cupsheavy cream
  12. 1 cupchicken stock
  13. 2 TbspFranks Red Hot sauce
  14. 3 cupsshredded cheese

Cooking Instructions

30 minutes
  1. 1

    In a 4 quart pan add 1 Tbsp oil and 3 Tbsp butter along with the scallions, garlic, Poblano pepper, salt and black pepper. Sauté until soft. (Note: I put the scallions, garlic and peppers into a small food processor to chop them up)

    Whisk in 2 Tbsp flour. Add in the chicken stock, heavy cream, and hot sauce. Bring to a boil and add the onions and broccoli. Simmer for 10 minutes to cook the onions.

    Add in cheese and mix well. Taste and add salt, pepper, hot sauce or cheese if needed. If sauce is too thick add in some chicken stock. Serve and enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
