Ingredients

20 minutes
4 persons each type
  1. For cucumber-curd salad we need 1cup finely chopped Cucumber
  2. 1 cupcurd
  3. 1/4 tspsalt
  4. 1/2 tspsugar
  5. 1/4 cupRoasted and crushed peanuts
  6. Few springs coriander leaves and curry leaves
  7. For tempering 1tsp oil, 1green chilly,1/2 tsp cumin seeds, one pinch asafoetida (hing)
  8. For cucumber peanuts salad we need 2cups finely chopped cucumber
  9. 1/2 cuproasted and crushed peanuts
  10. 1/2grated fresh coconut
  11. 1/4 tspsalt or as per taste
  12. 1/2 tspsugar or as per taste
  13. 1 tsplemon juice
  14. 1 tbspwashed and cut coriander leaves
  15. For tempering 2 tsp oil, 2 green chillies chopped, cumin seeds 1/2 tsp,1pinch asafoetida

    First we will see cucumber and curd salad

    Chop cucumber finely, add curd, sugar, salt, chopped coriander leaves and mix well.

  3. 3

    Now prepare tempering by heating oil and adding cumin seeds, chopped green chilli, add asafoetida and curry leaves.

  4. 4

    Add tempering to the cucumber to cucumber-curd mixture. (If you don’t want tempering you can skip that.) Mix well.

    Now your raita is ready.

    For preparing the cucumber-peanuts salad put chopped cucumber in a bowl. Add crushed peanuts, grated coconut, salt, sugar, chopped coriander leaves, lemon juice. Mix all ingredients.

    Heat oil and add cumin seeds, chopped green chillies, curry leaves, asafoetida.

  8. 8

    Add tempering to the salad and mix well.salad is ready.
