As a teetotaller I’m always trying new recipes substituting alcoholic beverages for the non alcoholic version. If you can’t get a non alcoholic substitute try vanilla extract.

Ingredients

2 servings
  1. 1onion finely sliced
  2. 1 tspminced garlic
  3. 500 gchestnut mushrooms finely sliced,
  4. reserve some for garnish
  5. 100 gBrie (rind removed)
  6. 500 mlchicken stock or vegetable
  7. Good knob of butter
  8. SplashDouble cream
  9. Pinchwhite pepper
  10. 100 mlNon-Alcoholic brandy (Online)

Cooking Instructions

  1. 1

    Melt the butter in a heated frying pan.
    Add the onion, garlic and mushrooms, then saute till onions are translucent.
    Add the and Brie and continue to cook, stirring often, until the Brie melts, it may take a little longer than other cheeses but be patient.
    Add the chicken stock and bring to a boil.

    Add the cream and brandy substitute, white pepper and simmer.
    Serve in a warm bowl with a scattering of mushrooms.
