Ingredients

30 minutes
3-4 servings
  1. 1 tbspf butter
  2. 1small onion sliced
  3. 2garlic cloves sliced
  4. 1small piece of fresh ginger sliced
  5. 3parsnips peeled and sliced
  6. 2carrots sliced
  7. 1/2 tspcumin seed
  8. 1/2 tspcoriander seed
  9. 1cardamom pods
  10. 1 tspgaram masala
  11. 600 mlchicken or vegetable stock
  12. 70 mldouble cream
  13. salt and pepper to taste

Cooking Instructions

    Heat the butter in a saucepan and gently fry the chopped onion until soft. Add the sliced garlic and ginger and cook for another minute.

    Add the parsnips, carrots and all the spices.

    Pour over the stock, cover and simmer gently for 30 minutes

    After all the vegetables are soft, add 3/4 of the cream, let it boil then turn off the heat. Using a blender, blitz the soup until completely smooth.

    Serve with remaining of the cream, and slices of home baked bread. Enjoy.
