Parsnip and carrot soup

A tasty cream soup will sure to warm you up when the weather gets cold. Seasoned with heart warming spices, with the added smoothness of double cream. #GoldenApron23
Cooking Instructions

Heat the butter in a saucepan and gently fry the chopped onion until soft. Add the sliced garlic and ginger and cook for another minute.

Add the parsnips, carrots and all the spices.

Pour over the stock, cover and simmer gently for 30 minutes
- 4
After all the vegetables are soft, add 3/4 of the cream, let it boil then turn off the heat. Using a blender, blitz the soup until completely smooth.

Serve with remaining of the cream, and slices of home baked bread. Enjoy.
