Ingredients

  1. 2 2/3 cupspeeled, seeded and chopped cucumber
  2. 1 1/2 cupspeeled and chopped carrots
  3. 1 cupwater
  4. 1 teaspoonmaple syrup
  5. 1very small clove garlic, chopped (optional)
  6. 1 teaspoonextra-virgin olive oil
  7. 1/2 teaspoonfirmly packed chopped fresh mint
  8. as neededfreshly ground pepper, optional

Cooking Instructions

    Prepare a checklist. Keep all ingredients within reach

    PLACE all ingredients in a blender and process until almost smooth. Transfer to A JUG refrigerate 2 and to 4 hours, or until well chilled.

    Serve chilled in a bowl. Garnish with a sprig of mint. you may sprikle freshly ground pepper. Enjoy the refreshing healthy colorful soup
