Ingredients

  1. 250 gmminced chicken
  2. 1 tbspolive oil
  3. 2bay leaves
  4. 1/2 cuponion finely chopped
  5. 5 clovesgarlic finely chopped
  6. 1/4 cupcarrots finely diced
  7. 3mushrooms finely sliced
  8. 1/4 cupsticks celery finely diced
  9. 1/4 cuptomato puree
  10. 3large tomatoes blanched and pureed (1 cup)
  11. 1 tspbrown sugar
  12. 1 tsporegano
  13. 1/2 tspthyme
  14. 2 tspbalsamic vinegar
  15. 1/2 tspsalt
  16. 1/2 tspblack pepper
  17. 1stock cube crumbled in 1/4 cup water
  18. 250 gmsspaghetti

Cooking Instructions

    To begin, heat a pan. Add olive oil. Add bay leaves, onions, garlic, carrots, and celery. Saute until onions are translucent. Do not brown.

    Now add in the minced chicken and cook on medium heat until the liquid dries up and the chicken mince browns a bit.

    Once cooked, add the tomato puree, pureed fresh tomatoes, brown sugar, oregano, thyme, salt, pepper, balsamic vinegar, and stock. Stir and bring it to a boil. Reduce the heat and simmer until the sauce thickens.

    In the meantime, boil the spaghetti in salted water as per the instructions on the package until al dente. Drain well and keep aside.

    To serve, place some spaghetti on a serving dish. Spoon the bolognese sauce over it. Sprinkle with spring onions. Spaghetti Bolognese is ready to serve.
