Orzo with Button Mushrooms in Red Sauce

Orzo or the famous Rice shaped Pasta from Italy is not only a visual delight but also a connoisseurs delight. Also called as Risoni, it is shaped as a long grain of Rice and traditionally made up of flour. It is made with Semolina, a type of flour that is made up of Durum Wheat. It is also made from grain flour too or even in some cases with Rice and Corn flours.
It's enjoyed in many ways. Right from Salads and Soups to a great whole meal for Dinner, it's just amazing.
It has a high Fiber and Protein content too and is absolutely perfect for those who are looking for weight loss ideas. This Pasta would make one feeling full for longer.
But it is high in Carbs, so people with Diabetes need to be a bit careful unless it's a special low Carb Orzo from any brand.

In this particular version by me, I have used Red Sauce along with some Button Mushrooms. It's absolute creamy, savoury and meaty flavours all merged into one. You will love it on any day especially for weekend family Dinner. It's a great option and a perfect treat for your loved ones.

Ingredients

25-30 minutes
5-6 servings
  1. 500 gmOrzo Pasta
  2. 2finely chopped Onions
  3. 4-5Tomatoes blanched
  4. 200 gmsliced Button Mushrooms
  5. 2-3 tbspOlive Oil
  6. 3-4chopped Garlic cloves
  7. 1 tspBlack Pepper powder
  8. 1 tspSalt or to taste
  9. 1 tspCumin powder
  10. 1 tspOregano or Italian seasoning
  11. 2-3 tbspchopped Coriander or Parsley

Cooking Instructions

    Bring water to a rolling boil. Take it off the heat. Add tomatoes and cover. Keep them aside for about 15 minutes or so. Mash these blanched tomatoes after the stipulated time and use as the sauce. Or store bought tomato paste can also be used. It's an amazing alternative.

    Meanwhile, boil pasta al dente in enough water with salt and oil. Drain and keep aside. Do not over cook. Until it gets done, prepare the sauce along with the sliced button mushrooms being added to it. Drain and set it aside after the pasta is done.

    Heat oil in a cooking pot and saute the minced garlic first. Add the chopped onions to the pot now and saute until translucent.

    Add the mashed tomato pulp after the onions are ready. Also add the powdered spices along with the mushrooms and mix well. Let it cook for about 4-5 more minutes. Finally add the boiled pasta and toss.

    Mix well. Cover and cook on a low heat just until heated up nicely for serving. Garnish with chopped parsley or coriander. Serve hot immediately. Enjoy!
