Ingredients

  1. 1and 1/2 cups Penne Rigate (I prefer Darum wheat pasta compared to Maida/Refined flour)
  2. 1 cupBroccoli cut into thin florets
  3. 6big and ripe red tomatoes
  4. 1big onion cut in julienne
  5. 6-7 podsgarlic thinly sliced
  6. 3 tbspOlive oil
  7. 1 tspsugar
  8. 2 tspsalt (as per taste)
  9. 1 tspblack pepper powder
  10. 2 tbsptomato ketchup
  11. 1 tsporegano crushed
  12. 2bay leaves
  13. 2 tbspdiced cheese (I use Amul Mozzarella and Cheddar cheese blend)
  14. 1 tspchilli flakes (optional)

Cooking Instructions

    Boil the pasta in a heavy-bottomed pan with sufficient water and a pinch of salt. Make sure the pasta doesn’t stick to the bottom of the pan by stirring occasionally. Cook till the pasta is tender, which you can know by the change in colour of the pasta to solid white. Once cooked drain the pasta in a sieve and keep the boiled water for later use in the recipe.

    Roast the broccoli in 1 tbsp of olive oil on slow flame till the florets turn crunchy golden brown. Switch off the flame and take out the broccoli and keep it aside. Let’s go to the next step.

    In the same pan add 2 tbsp of olive oil, bay leaves, onion, and garlic and keep stirring until onion and garlic turns slightly golden brown.

    Now add tomatoes, salt, and sugar and let the tomatoes get completely cooked to have a mashed consistency, now add roasted broccoli and mix well. Let it get cooked for 1 min.

    Add boiled pasta, 1 cup pasta-boiled-water, tomato ketchup, and pepper powder, and give a good mix. Let it all get combined and cooked for another couple of minutes.

    Switch off the flame, and add diced cheese, chili flakes, and crushed oregano on top. Delicious-looking and tasting pasta is ready to make you happy.
