Cassava is a root Vegetable that is grown underground just like a Potato. Tapioca starch is the most common one made from this and has many uses in culinary terms. Also called as Yuca, it is entirely made up of simple Carbohydrates with hardly any traces of Protein. It's a staple for most of the people. Cassava is a native Vegetable of South America and grows in tropical and sub tropical regions.
Starchy and mildly flavoured Tapiocas are edible roots with a grainy textured flesh. Starch is a basic source of energy that powers the body cells and is almost easily digested.

Tapioca promotes healthy weight gain. It promotes muscle growth and development. Eases digestion and absolutely gut friendly. It improves blood circulation. It is rich in Folate that reduces neural tube defects in infants. It is low in Protein, Vitamins and Minerals but high in Carbs. Largely used as a thickening agent in various manufactured foods.
In this recipe, I have made Finger Chips with it. A perfect munchie on any day for all.

Ingredients

5-6 servings
  1. 1Tapioca
  2. 1/2 tspSalt
  3. 5-6 tbspCoconut Jaggery
  4. as neededOil for frying

Cooking Instructions

    It is essential to peel or remove the thick outer layer of each tapioca. Just make a deep cut at the centre vertically. And once it's done, tear it open with the hands. The thick layer will come out revealing a white inner body.

    Cut it in two halves vertically to remove the string from the centre. It is not edible. Therefore it needs to be removed and then proceed with the slicing or the making of the chips using a chipper or manually whichever is desirable.

    Meanwhile heat enough oil for frying in a kadai. Deep fry the raw tapioca fingers until golden brown and crisp. Drain on an absorbent paper.

    Serve hot with a generous topping of coconut jaggery. Enjoy!
