I wanted to eat warm udon, so I simmered it, made it into a thick sauce, and added ginger on top.
Cooking Instructions

Slice the green onion thinly on the diagonal.
Beat the egg.
Combine ◎ to make a slurry with potato starch and water.
Bring water and sliced green onion to a boil in a pot. - 2
Once boiling, add dashi powder, mirin, sake, and soy sauce to adjust the flavor.
Add the udon noodles and simmer.
Fill the udon serving bowls with hot water to warm them. - 3
When the udon reaches your desired level of tenderness, discard the water from the bowls and serve only the noodles in the bowls.

Bring the broth in the pot to a boil, add the potato starch slurry, and thicken to your liking.
Pour in the beaten egg, cover, and turn off the heat after 30 seconds. - 5
Pour the thickened egg broth over the udon and generously top with ginger to finish.
