  1. 150 glow-fat feta cheese, cubed
  2. 1 lettuce head, cut into small pieces
  3. 4 medium tomatoes, cubed
  4. 4 medium cucumbers, sliced
  5. 1 small red onion, cut into rings
  6. 1 green bell peppers, cut into thin rings (optional)
  7. 10 black olives, pits removed
  8. mint leaves optional
  9. Dressing:
  10. 3 tablespoonsolive oil
  11. 1 tablespoonlemon juice
  12. 1 tablespoonred vinegar
  13. 1 teaspoondried oregano
  14. salt to taste

    In a small bowl, mix the dressing ingredients together until well combined.

    Place all the salad ingredients, except the black olives and feta cheese, in a large bowl and pour the dressing over them.

    Toss gently to combine. Arrange the olives and feta cheese on top and serve.
