Spicy Couscous Salad with Indian Tadka
#SoupSalad - Couscous as a salad is very commonly used in Mediterranean cuisine. Here I combined it with some assorted Bell Peppers and gave it an Indian tempering for an entirely different flavour. This healthy and nutritious salad serves as a complete balanced meal in itself as it is very filling. I gave a tempering of mustard seeds, urad dal (split black gram), curry leaves, red chilies and asafoetida. So there is a crunch to every bite of this yummy salad. You can run your imaginations run wild and add any other veggies you fancy. Some cashews, almonds or peanuts can also be a welcome addition. So enjoy this spicy salad with a dash of lime.

Cauliflower cous cous and chickpea salad
I can't quite express how much I love cauliflower 😍 and how much I love chickpeas 😍 (hence the heart eyes) so the combination of the two is the best thing ever.Legumes, pulses and beans are my go to for a strong source of protein! The humble chickpea or Garbanzo bean are an extremely healthy legume, with large quantities of dietary fiber (12.5 grams in one cup) and protein (14.5 grams in one cup) as well as plenty of minerals such as manganese, copper, folate, iron, folate and zinc. I probably eat chickpeas on average 3 times per week, they're so versatile, I mean what would the world be without falafel and hummus... I don't really want to think about that.Let's hand over to the other star in this dish, cauliflower. By far my favourite vegetable and once again very versatile. Jam-packed with vitamins and minerals and just like chickpeas, provides a source of "good" carbohydrate giving you the energy and sustainability you need, without spiking your blood with unecessary refined sugars. I usually roast my cauliflower florets in a little olive oil with some turmeric or garam masala but tonight I thought I'd try something a bit different, something I've seen online and popular on recipe sites and lots of the blogs I follow recently, is cauliflower cous cous/rice. This is literally a case of simply blitzing the uncooked florets in a food blender/processor to create a cous cous/rice consistency, that is surprisingly soft and fluffy but still has texture. Now, I know what yo...

Meatballs couscous
I became quite obsessed with cooking in my new tajine. It simple, everything you cook in that plate is instantly crazy delicious. And this recipe is no different. I basically used the same base as with my chicken tajine, using, this time, home-made meatballs, a tomato stew and dress it up with couscous. The result is quite indulgent, but it's Saturday after all, so why bother.

Couscous & French Beans Salad with Chickpeas & Cucumber
#SoupSalad - This is a very healthy salad with the goodness of couscous, french beans, black chickpeas and cucumber. A great light meal for any weight watchers. I added some feta cheese to add a punch to the salad. I also gave a tempering of mustard seeds, dry red chilies and asafoetida, which was later poured over the prepared salad at the time of serving. It gives a complete new dimension to any ordinary salad. Just try it and you will not be disappointed.
