Simple Cous Cous Meal

This meal consists of chick pea cous cous, mushrooms, pan fried halloumi and vegetables. With a dash of greek yoghurt!

This meal consists of chick pea cous cous, mushrooms, pan fried halloumi and vegetables. With a dash of greek yoghurt!

Cooking Instructions
- 1
Soak the cous cous in boiling water (sufficient to just cover the grains) and leave for five minutes

Once all the water is absorbed, fluff through with a fork. Leave aside
- 3
Dice halloumi cheese and pan fry until lightly golden brown on all sides. Take out of pan and leave aside
- 4
Select what vegetables you want. I usually use onions, tomatoes, zucchini, beans and bell pepper.

Mix the chickpeas and vegetables and pan fry until veggies are slightly wilted. Take off fire. Do the same with the mushroom

Add the cous cous and mix through vegetable and chickpea mix. Keep the cooker to a minimum

Add a dash of mixed herbs and toss the ingredients

Plate up the cous cous, chickpea and veggie mix, mushrooms and have the halloumi as a side dish. Slice up a tomato and add a spoon of greek yoghurt with a dash of chilli powder

Fry thinly sliced white onion in olive oil. Add your beef strips and cook till brown on medium heat. In the meantime prepare your peanut sauce.
