材料

  1. boneless pork loin roast let the roast sit at room temperature for 30 minutes before cooking). 2 lb
  2. extra virgin olive oil 2 tablespoons (divided)
  3. fresh rosemary (minced) 1 tablespoon
  4. coarse sea salt 2 teaspoons
  5. freshly ground black pepper 1 teaspoon
  6. smoked paprika 1 teaspoon
  7. garlic powder 1/2 teaspoon
  8. onion powder 1/2 teaspoon

    Gather all the ingredients. (this pork loin was 1.7 lb).

    Position a rack in the second to lowest section of the oven.

    Preheat the oven to 375F.

  4. 4

    Combine the rosemary/salt/pepper/paprika/garlic/onion.

    Rub 1 tbs olive oil over the entire piece of meat.

    Rub the dry mixture over the entire piece of meat.

    Oil in a Dutch oven (5 1/2 US Qt) over medium high heat.

    Place the meat.

    Sear on all sides until nicely browned.

    Cover the pork with aluminum foil.

    Place the Dutch oven in the oven.

    Cook 45-50 mins or internal temp reaches 145F.

    Remove from the oven, and let it rest for 30 mins.

    Cut the pork in slices and serve!

コツ・ポイント

Let it sit at room temp for 30 minutes before cooking. Use a thermometer to ensure that it is cooked all the way through
