Cucumber Salad

This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods! He usually only did "Cucumbers & Tomatoes in Italian Dressing" but when I started making it myself in my late 20s I started adding onion because I'm obsessed with them! 😆👌 Then, in my early 30s a good friend made this at her home with the addition of green peppers as she had grown a lot of them that year. So now, my personal recipe has adapted to the inclusion of all of these wonderful foods! I also, play around occasionally with the dressing. 😎👍 This particular time I used a raspberry vinaigrette in place of Italian Dressing & I have also used regular vinaigrettes as well. This is always a nice addition to dinner or the cookout. And even as a midday snack! 👏🤤

I wanted a change from the traditional salad, and something cool, and refreshing.

I was looking for something to go with a steak dish I was trying, called Japanese Steak Rice Bowl. (Japanese Style Steak Rice Bowl https://cookpad.wasmer.app/us/recipes/4643016-japanese-style-steak-rice-bowl ) This Korean cucumber salad looked like it might fit the bill. It was perfect, really added a nice offset to the slightly sweet sauce on the steak. Now to be fair, I'm not a huge fan of cucumbers, it's a take or leave it kind of thing. But I tell you what, this thinly sliced English cucumber, in this light pickle was perfection. I used a medium hot red pepper powder, and it was not spicy. The flavors were fresh and just happen to be perfect with the steak. Without the lime juice, it had a very slight acidic taste, if you want it a tad more, use the lime/lemon juice also.

It was fun spending some time with Eriko this morning. She was hungry, so I thought it'd be a good idea to make a comforting breakfast to show her my appreciation for letting me stay in the house. The weather was springlike; the kitchen was filled with light, and from where I cooked I could see the beautiful sunlight. Porridge and some refreshing salad always made a perfect combo for a day like this. Eriko devoured it with enthusiasm!

Guys this is my personal salad because I like spicy food! And for me eggs with sardine and potatoes is great!! So feel free to add what you like. This salad is really adaptable💞💞💞💞💞

I made this when I didn't have an appetite.Use this recipe with apples, pears, or persimmons for a tasty seasonal salad. It's also tasty with the juice that comes out of the fruit after chilling it in the fridge.When transferring to serving dish, a dash of black pepper will add a nice touch. A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!

A nice summertime side dish for cookouts and family gatherings

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!

My mother used to make a similar recipe when I was younger. I was never able to get the recipe from her so this is the best recreation of it.

When I was little my mom and I would go to a Korean market where they made cucumber salad. This is my version of it. Still haven't been able to get that childhood taste but it is still great!

This is a recipe that uses up a lot of cucumbers. I wanted to make a western style salad that went well with pasta, so I combined some ingredients I usually have on hand.The sautéed bacon and olive oil becomes the dressing. Eating these always make me nostalgic for school lunches. It's an easy, relatively simple sandwich but I have never seen this anywhere else so I posted this recipe. My sister, who went to the same school, says 'I don't remember this.' I wonder why. A lot of people seem to like it anyway!The cucumber is prepared with salt, so don't use too much mayonnaise. When I was an elementary school student, I used to think that the mustard in mine was too strong so you might not need any mustard for your children's sandwiches. This has become a go-to for weekly meal prepping. It's such a simple, but tasty recipe and adds a lot of freshness to a meal. I usually pair it with some quinoa or brown rice, some chicken or drained and rinsed chickpeas and some feta cheese. If you'd like to take some of the 'bite' out of the raw onion, soak it in some cold water for a few minutes first.

This is a salad I make ALL summer. This is just the basic recipe but you can think outside the box with this and add Parmesan, pepperoni, provolone, salami, additional veggies like roasted peppers or celery etc etc. Its so simple but delicious!
