Cooking Instructions

Preheat the oven at 180°C or 350°F and grease the baking tin and grease again after placing a baking paper.

Sieve all the dry ingredients(maize flour,wheat flour,baking powder,cinnamon)

Put eggs and sugar in a separate bowl and mix till fluffy.

Add vanilla essence and lemon zest then mix for a few seconds.Add oil and milk and mix again.

Add the sifted dry ingredients in the bowl with wet ingredients and fold in.

Bake for 35-45 minutes at 180°C /350°F until a cake tester or toothpick comes out clean.

Cool in the pan for about 10 minutes, then turn it out onto a cooling rack and cool completely.

Serve and enjoy!

I came across this recipe on the internet when I was looking for semolina cake recipe. In my first attempt I followed the recipe step by step, but unfortunately the cake turned out very dry. So, I made orange syrup and poured it on top, I thought the syrup would make the cake moist. The cake was nice and moist with orange syrup, but it had to be eaten as quick as possible, because it turned bad the next day.So, in this recipe I have made some adjustments where I reduced the amount of flour and sugar in it and added extra almond powder. I used orange juice instead of milk and added orange zest. The cake turned out very nice, moist with slightly orange flavored. Wiwik Sunariyah
