Matoke in Curry Sauce

I like curries a lot so instead of eating just plain matoke, I prefer to spice it up a little bit and what is more perfect than a curry sauce. My family isn't one that really likes matoke but with this recipe, I get them to really eat it 😋😋

I like curries a lot so instead of eating just plain matoke, I prefer to spice it up a little bit and what is more perfect than a curry sauce. My family isn't one that really likes matoke but with this recipe, I get them to really eat it 😋😋
Cooking Instructions
- 1
Peel bananas, cut into halves and boil in salted water till tender then drain the stock and set aside for the sauce
- 2
Fry onions in oil and when they are translucent, add minced ginger and garlic. Fry until they release a nice aroma.
- 3
Add in the two all-purpose seasoning cubes and one teaspoon of curry powder. Stir and cook for about a minute.
- 4
Add in tomatoes and a little bit of the stock that you put aside and let the tomatoes cook till tender.
- 5
Add in the diced carrots, saute for about 2 minutes(I do so because I like to have my carrots crunchy but you can cook a little longer if you like them completely cooked). Then add the remaining stock and simmer on low heat for 5 minutes.
- 6
Slowly add in the boiled bananas and some salt and mix gently to avoid mashing then let it simmer for like 3 minutes. Turn off the cooker and finally add your coriander.
- 7
Serve while hot with a vegetable of your liking and enjoy👌😋

Stir Fried Wiener Sausages and Cabbage with Curry Sauce Stir Fried Wiener Sausages and Cabbage with Curry Sauce
This is a recipe my mom often made for me when I was little. The dish can become very spicy depending on the curry powder, so adjust accordingly while checking the taste. If making this for children, then just add enough curry powder to add fragrance. Water will come out of the cabbage as time goes by, so heat it up again just before serving. Zucchini and Ground Pork Stir-Fry with Curry and Soy Sauce Seasoning Zucchini and Ground Pork Stir-Fry with Curry and Soy Sauce Seasoning

Both he and my husband liked this, so I posted the recipe here.Skip Step 2 if you prefer a crunchy texture for the zucchini. I microwave them since I prefer well-cooked veggies and want to reduce the time it takes to stir-frying them.Adjust the amount of curry powder to taste. For 2 servings.
