Jini dosa is fusion street style receipe which effects like pau bhaji.
I use vegetables , pau bhaji masala, chat masala,ketchup etc.

Ingredients

  1. Dosa batter
  2. 2 bowlrice
  3. 1 bowlurad dal
  4. 2 tbspchana dal
  5. 2 tbsptuvar dal
  6. 1 tbspfenugreek seeds
  7. Jini dosa stuffing
  8. 2 tbspfinely chopped cabbage
  9. 2 tbspfinely chopped onion
  10. 2 tbspfinely chopped capsicum
  11. 1 tbspTomato ketchup
  12. 1 tbspButter
  13. 1/2 tbspChat masala
  14. 1/2 tspPav bhaji masala
  15. 1 tbspFinely chopped green coriander
  16. as neededCheese
  17. as neededOil
  18. For sambhar
  19. 2 tbspoil
  20. 1 bowltuvar dal
  21. 1/4 cupurad dal
  22. 1finely chopped tomato
  23. 1finely chopped onion
  24. to tasteSalt
  25. 1/2 tbspturmeric powder
  26. 1 tbspred chilli powder
  27. 1 tbspsambhar masala
  28. 1 tbspjaggery
  29. 4 tspGreen chopped coriander leaves
  30. 1 tbspcumin coriander seeds
  31. 2 pinchasafoetida
  32. 1 tbspcumin seeds
  33. 3-4curry leaves
  34. 1tamarind seeds

Cooking Instructions

    For preparing batter : take a big vessel and add rice, urad dal, tuvar dal, chana dal, fenugreek seeds wash and soak it. stay rest for 8 hours.

    After 8 hours take a mixture grinder and crush the mixture for batter.

    Further, add salt and crushed sugar and stir well. Our batter is ready. Put it for 6 hours for fermentation.

    For preparing jini dosa : Take a non-stick pan and pour ladle with full of dosa batter on hot pan and spread gently in circular motion.

    Simmer for a minute and allow dosa to cook. If you need to apply oil in corners then you do it.Next rub butter and tomato ketchup.

    Furthermore add finely chopped cabbage, onion and capsicum. Keep flame on low -medium.

    Next add pau bhaji masala, salt and chat masala and spread the stuffing for covering the entire dosa.

    Now spread cheese on dosa.

    And cut the dosa into thin strips using pizza cutter. And roll it tight.

    Or you can roll it first and after that cut it. Now jini dosa is ready.

    For preparing sambhar : Take a pressure cooker and add tuvar dal, urad dal wash it and boil it for 3-4 whistles. After coming at room temperature grind the dal with grinder.

    After that take a pan and add oil, cumin seeds, asafoetida, curry leaves and saute it.

    Now add finely chopped onion till it turns golden brown color. After that add finely chopped tomatoes.

    Further add dal mixture in it. And add salt, jaggery, turmeric powder, cumin coriander powder and red chilli powder.

    Now add tamarind seed and chopped green coriander. And boil it for 20 minutes. Now it's ready.

    Enjoy jini dosa with sambhar and dry coconut chutney.
