Ingredients

20 mins
1 serving
  1. 2eggs
  2. 2 slicesbread
  3. 1/4finely chopped onion
  4. 1/2finely choppped tomato
  5. Halfchopped green chilli - optional
  6. Pinchsalt
  7. 1/2 teaspoonpaprika - optional
  8. 1/2 teaspoonblack pepper - optional
  9. 2 stalksfinely chopped coriander
  10. 1/2 spoonfulcooking oil

Cooking Instructions

    Chop finely the onions, tomatoes, chilli and coriander.

    Have your eggs ready to mix with the chopped vegetables. Beat it first before adding the ingredients.

    Mix all the ingredients together and add the salt and spices at this stage as well.

    Place the pan on the stove to heat the cooking oil as you take the slice bread and soak it in the mixture that you made. Using a spoon coat the bread both sides as you flip it.

    Place the bread now coated with the mixture onto the pan. If you notice the bread is not fully covered once placed on the pan you can add the mixture from the plate using a spoon. Cook both sides till well done to your liking.

    Serve with an accompaniment of your choice. I usually take mine with tea 🙌
