Break eggs into a bowl. Slice tomatoes, peppers and onions

Put little oil in the pan. Fry onions for a minute
- 3
Add tomatoes and peppers, fry for 2 minutes.

Add curry, thyme, seasoning cubes and little salt
- 5
Whisk eggs and pour into the pan. Cover and leave for 2 minutes before turning over to the other side

For the sandwich. Get your bread, slice it and put the egg sauce on each side.

Add little oil to the pan again so the bread doesn't burn. Toast bread in pan till slightly brown not burnt

Toast each side for 3 minutes each. Sandwich is ready!

I served mine with orange juice and puff puff. Yummy 😋
