For Bentos: Crab Stick Tamagoyaki Flavored with Soup Stock and Mayonnaise

I had some leftover imitation crab sticks, so I made tamagoyaki a little different than the usual.
Cook it over low heat. You can use 2 slices of ham and cheese if you like. Standing it up vertically to cool will help it shape into a cylinder without becoming smashed. For 4 slices. Recipe by *Anna*

Cooking Instructions

Mix the eggs and * ingredients together.

Heat up some vegetable oil in a square tamagoyaki frying pan. Pour in 1/3 of the egg mixture, and place the imitation crab towards the back once the top side has solidified a bit, and roll it up.

After rolling, add in another 1/3 of the egg mixture, place a slice of cheese on top, and roll it up.

Add in the remaining 1/3 egg mixture, add in ham, and roll it up.

After you have finished rolling, wrap it in a paper towel, and mold it into a cylinder.

Wrap it up again in aluminum foil. stand it up vertically, and let it cool. Do not close the top end of the aluminum foil in order to let the heat escape.

After it has cooled, cut off both ends, and slice it.

I wanted it to be bouncy, so I based my method on chawanmushi (steamed savory custard) instructions.Straining the egg mixture will produce a smooth texture. Adjust the heat by removing the frying pan from the heat while cooking. It is difficult to roll the egg when it is soft set, but this will prevent any brown layers from appearing when the egg has been wrapped up.
