Originally, this was a recipe for sandwich bread. I wanted to try the dough course on my bread machine, and it turned out so delicious that I decided to keep the steps for myself.
Cooking Instructions

Add all ingredients except those marked with a star to the bread machine and select the dough course. Follow your bread machine's instructions for adding ingredients.

Once the dough is ready, divide it into 10 to 15 pieces, shape each piece into a ball, and smooth the top. Place them on a baking sheet lined with parchment paper.

Cover the dough balls with a damp cloth and let them rest for 15 minutes. Meanwhile, set your oven to 104°F (40°C) on the proofing setting.

Place the dough in the oven, spray the inside of the oven and the bread with water. Let it proof at 104°F (40°C) for 40 minutes.

After the second proofing, remove the dough and cover with a damp cloth to prevent drying. Preheat the oven to 356°F (180°C).

Just before the oven reaches 356°F (180°C), mix the egg and water well, and gently brush the mixture on top of the bread using a brush or the back of a spoon.

Bake in the oven at 356°F (180°C) for 15 to 18 minutes, checking for your desired level of browning. Once done, your bread is ready!
