Stir-Fried Beef with Celery (牛肉炒芹菜)

This stir-fried beef with celery is the first dish my grandfather taught me to cook when I was a teenager. I even wrote an essay about it, and my Chinese teacher read it to the whole class as an example! The beef is tender and juicy, while the celery stays crisp and refreshing. It’s quick, easy to make, and packed with protein and fiber. Every time I cook this dish, it brings back warm memories of my grandfather. Serve it with rice for a simple yet flavorful meal! Enjoy!
Cooking Instructions

Marinate the beef – In a bowl, mix sliced beef with cooking wine, cornstarch, and 1 tbsp oil. Let it sit for 10 minutes.

Prepare the celery – Slice 2 stalks of celery diagonally.

Stir-fry the beef – Heat 1 tbsp oil in a pan over high heat. Add beef and stir-fry until just browned. Remove and set aside.

Cook the aromatics – In the same pan, add a bit more oil if needed. Stir-fry scallions, ginger, and garlic until fragrant.

Stir-fry everything together – Add celery and stir-fry for 1-2 minutes. Return the beef to the pan. Season with salt, black pepper, soy sauce, dark soy sauce, and oyster sauce. Stir-fry for another minute until everything is well coated.

The stir-fry pack at the supermarket would do but if you overcook, the meat would be very hard to chew. I sometimes buy a big chunk of rib eye and slice it myself as rib eye is tender no matter how you cook it and the slices can also be used in Pho. But rib eye is pricey alright, and slicing it is a lot of work. NTVH
