Ingredients

4-6 servings
  1. 1 lbmushrooms (oyster, shiitake, king trumpet, shimeji, etc)
  2. 1 cuppacked mixed herbs (mint, cilantro, culantro, scallions)
  3. 1/4 cupchopped shallot
  4. 1-2fresh Thai chilis
  5. 2 tbspfish sauce
  6. 1 tspchili flakes
  7. 1 tbspsugar
  8. 3-4 tbspfresh lime juice
  9. 1/4 cupKhao Khua (toasted rice powder)

Cooking Instructions

    Fill a large pot with water and bring to boil. While waiting for it to boil, prepare the ingredients.

    Chop or tear your mushroom mix into bite size chunks.

  3. 3

    Roughly chop the herbs, shallots, and chilis.

  4. 4

    Once water is boiling, add the mushrooms and cook for about 3-4 minutes.

    Strain mushrooms and add to a large mixing bowl.

  6. 6

    While the mushrooms are still hot, add shallots, fish sauce, chilis, chili flakes, and sugar. Mix together.

    Add lime juice, Khao Khua (toasted rice powder), and herbs. Give it another mix to ensure everything is evenly distributed.

    Top with additional Khao Khua for crunch and Thai chilis for color & heat. Enjoy!
