Peel the carrots take a knife split the carrots into quarters, take a vegetable peeler and shave the carrots

Mix the cucumbers and carrots add raisins salt sugar

Add water and vinegar cover put into refrigerator for at least 2 hours overnight would be best

I just found out that cilantro goes on carrots like white on rice.Also did the same dressing but dill instead of cilantro. It was good.

If your beets or/and carrots come with tops you just paid for both so cut and set aside the top use them for another recipe. Some people were brought up with beet dishes. Beets are sometimes rejected because of the popular canned pickled beets. Fresh beets according to the way they are prepared are a bit different. This is a great pairing.
