Spinach & Squash Risotto Using Left Over Squash Soup

Ingredients

  1. 2 tbspOlive Oil
  2. 1/3 cupWhite wine
  3. 1 cupArborio rice
  4. 4 cupBroth (your choice)
  5. 3 cupSpinach
  6. 1 cupSquash soup (leftover)
  7. 1 tbspButter (optional)
  8. 1/2 cupGrated Parmesan Cheese
  9. 1/2Onion (optional)

Cooking Instructions

    Boil the broth on a pot.

    One another pot, sauté the chopped onion (optional) with the olive oil.

  4. 4

    Add the rice and "sauté" the rice for 1 minute

  5. 5

    Add the wine and stir well

  6. 6

    Add more broth as soon as the risotto starts to dry. Keep doing this. Stir constantly!

    After 10 minutes add the spinach

  8. 8

    At the end of the cooking (usually 30 minutes) add the left over squash soup.

    Mix well

  10. 10

    When the risotto is done add the butter (optional) and the cheese.

    Serve and enjoy!
