Delicate Coconut Cod Curry 🥥

This was such a treat this evening. The flavours are delicate enough to let the fish shine, but it is still full of flavour and comforting from the lovely coconut sauce and spice. I also danced around my kitchen while making it, but that step is optional 😆
Cooking Instructions

Mix the spices and salt in a small bowl. Coat the cod in 2/3rds of the spices and set to one side.

Fry the onions ginger and garlic until soft in the coconut oil, in a large lidded frying pan. Add the remaining spices and stir well, cook for another 5 minutes.

Use a small amount of coconut milk to loosen up the onions and scrape up any spices sticking to the base of the pan. Then add the rest of the coconut milk. Bring it up to the boil and stir well, then simmer for 5 mins or so until the sauce thickens.

Add the cod and the chopped coriander. Simmer with the lid on for 5-8 minutes or until the fish is cooked. Finish with the fresh lemon juice and a garnish of fresh coriander leaves.

I started this as a chicken curry, then I added apple sauce, mango chutney, can of new potatoes and then can of tomatoes and cream and it transformed into a lovely dish. The family loved it with crusty bread to dip. You could taste all flavours and you got a little kick at the back of your throat from the curry but not enough that it overtook the other ingredients.
