Ingredients

4-6 servings
  1. ✅️ A. TO BE MINCED OR CHOPPED
  2. 4 clovesgarlic
  3. 2bird eye chilies
  4. ✅️ B. THE REST OF THE INGREDIENTS
  5. 1/4 cupwater - slightly hot/warm
  6. 1/3 cupsugar (heaped)
  7. 1/3 cupfish sauce
  8. 1/4 cuplime or lemon juice
  9. ✅️ INGREDIENT VARIATIONS
  10. 1. Use grated palm sugar or coconut sugar instead of white granulated sugar. Note that palm sugar & coconut sugar are less sweeter than white sugar. You may need to use or add more
  11. 2. For a vibrant red hue, some add ground red chili paste to this sauce and others even add ready made, store-bought 'sambal', Sriracha to give the sauce an extra kick!

  1. 1

    Gather & prep all ingredients. First, In a deep bowl, combine and mix slightly hot water and sugar. Stir/whisk until sugar is FULLY DISSOLVED. Feel free to use room temperature water but it does take time to dissolve the sugar. Keep aside to cool and prepare the rest. Next, juice the lime or lemon (we used mostly lemon), peel garlic cloves & wash the chilies. Place garlic cloves and chillies in a chopper.

    Chop/mince garlic and chilies. See pic below for reference.

    COMBINE & MIX chopped ingredients with ✅️B (the rest of the ingredients - sugared water, fish sauce & lime/lemon juice). Taste & adjust seasonings as needed. Store in a glass jar or bottle and refrigerate.
