I started this as a chicken curry, then I added apple sauce, mango chutney, can of new potatoes and then can of tomatoes and cream and it transformed into a lovely dish. The family loved it with crusty bread to dip. You could taste all flavours and you got a little kick at the back of your throat from the curry but not enough that it overtook the other ingredients. Really was yummy. Its similar to my sweet curry but more taste. Lovely.

Ingredients

  1. 2chicken Breasts
  2. 1 largeonion, chopped
  3. 1 tbspHot Curry Powder
  4. 1 tspTurmeric
  5. 1 cloveGarlic crushed
  6. 1/2 tspPaprika powder
  7. 1 tbspApple Sauce
  8. 1 tbspMango Chutney
  9. 1 pintsBoiling Water
  10. 1chicken stock (Cube) bullion
  11. 1 large canNew Potatoes
  12. 1 canChopped Tomatoes
  13. 1 dashLemon Juice
  14. 1/2 cupSingle Cream
  15. 1 dash Salt and Pepper to taste
  16. 2 tbspveg oil
  17. 1 handfulfrozen sweet peas
  18. 1 handfulfrozen sweetcorn

Cooking Instructions

    Start by cutting chicken cubed and onions small

  2. 2

    Put oil in fry pan and heat, then add chicken and onions and cook until chicken has turned white

  3. 3

    Add all the spices and stir in as you add them, garlic, curry powder, turmeric, paprika, salt and pepper stir it all in then add the chicken stock stirring.

    Bring it to the boil then add apple sauce, dash of lemon juice, and mango chutney turn down and simmer for 15 mins.

    Add frozen peas, sweetcorn, can of Potatoes and can of tomatoes stirring it all in until mixed together. Let it simmer for 10 mins then serve.
